A STRAW WINE FOR CELEBRATIONS

Sciacchetrà

This is the wine that was brought out during celebrations and that each family in the village saved for special occasions. Sciacchetrà is made primarily from autochthonous Bosco grapes with a small percentage of Arbarola and Vermentino. A wine of patience and meditation, perfect for sharing both festive and relaxed moments.

Process

The land here is made up of sand with a high percentage of mineral rocks, and very little common “dirt”. But difficult terrains give birth to quality wines. The very first bunches of grapes that are selected and cut during the harvest are destined to become Sciacchetrà. They are gently arranged on drying racks where they will stay for at least two months in a dry, well-ventilated environment. During this time, each grape loses up to 70% of its water weight. Sometime after November 1st, the grapes are taken out to be pressed by hand, and then go through a 21-day fermentation stage. Once fermentation is finished, the grape skins are removed from the wine and pressed by hand. Only the heart of the grapes will become Sciacchetrà.

Vineyards

In the local dialect, “Sciacca” means “press” and “trai” means “to place aside.” This is probably the origin of the name “Sciacchetrà,” a word that was used in 1860 by the painter Telemaco Signorin in his diary. Prior to that, the common term for this wine was “Refurza,” which means “vino rinforzato” — “fortified wine” in English — probably as a nod to the practice of letting the grapes dry out before pressing. The grapes are carefully chosen while still on the vine, a process carried out by experts — all women — in the village under the supervision of Giulia, Luciano’s mother. In our home we let the grapes — predominantly Bosco variety — dry out in a shady place until mid-November. After pressing, the wine goes through a slow, spontaneous fermentation in stainless steel tanks until it reaches an alcoholic level that blocks further action by the yeasts. On average this happens at about 15% alcohol and after about one year.

BOTTLE AGING This wine is well-disposed to aging. FOOD PAIRING Perfect with medium to long-aged cheeses from the neighboring Val di Vara, a way to match both palate and territory at once. Or with dark chocolate brownines and salty caramel.
