A WHITE WINE WITH THE ESSENCE OF LIGURIA

Cinque Terre Dop

The best qualities of the terroir of the CInque Terre are expressed in this wine. The Bosco, Albarola, and Vermentino grape vines take root and flourish between the high mineral content of the soil and the saltiness of the sea air. As a result of centuries of farming, many other varieties sneak into the bottles in tiny percentages, giving birth to a white wine with a big personality. We make around 9,000 bottle of this wine annually.

Process

An intense wine that captures all of the aromas of the Mediterranean hills and plants. The stems are removed from the bunches, which then are placed in temperature-controlled stainless steel tanks for 24 hours. Then they are pressed in a pneumatic press at controlled pressure levels. The must is then left to ferment without the addition of external yeasts. After the final natural fermentation around June, which takes place because of the rising temperatures in the cellar and gives the wine its rounded, sweet notes, it goes into the bottle.

Vineyards

The steep hills above the sea were tranformed into terraced vineyards over centuries of work. Every small piece had to be torn from the mountain and filled with dirt from neighboring areas. Our soils contain sand, many mineral rocks, and not much common dirt.

Description

HARVEST 2020 — Bottled in June 2021 YIELD 65-70% grapes/wine SERVING RECOMMENDATIONS Serve cool, at 14-15°C in medium-sized glasses. Open a few minutes before serving.
BOTTLE AGING Ages well. FOOD PAIRING Classic Ligurian seafood dishes, fish soups, cooked anchovies, white meat with Mediterranean herbs.
