RED WINE WITH A LONG HISTORY.
Centuries of winemaking have made this red wine possible. Over the years, in addition to the white grapes, farmers began to plant a wide variety of red grape vines, which were used to make wine for their own consumption. We have brought them together in this wine, which we have called “minestrone” because it comes from a mixture of grapes. These are the last bunches to be picked during the harvest, after the white grapes have already been picked and processed.

The grapes are crushed and placed into a tank where fermentation begins. The skins remain in the must in order to give color to the wine. We perform a battonage (pushing the floating skins back down into the must) twice a day for the entire time of fermentation. The wine is then pressed and left to age until the right moment for bottling.
Despite the natural inclination for white wines in the Cinque Terre, red grape varieties have been farmed over centuries in order to make people’s “house wine.” These varieties, picked at the end of the harvest and crushed all together, make our “Minestrone.” A wine to be drunk in good company during meals.
